2 Ingredient Banana Pancakes

This recipe was created and inspired after I asked on my Facebook page what kind of recipes y'all wanted to see with the majority choosing recipes with 4 ingredients or less.  You can see my video tutorial here. This makes any where between 10-20 small pancakes. You can make this recipe Paleo by substituting the yoghurt for coconut yoghurt and the butter for coconut oil. 

2 INGREDIENT BANANA PANCAKES

INGREDIENTS

1 medium banana
1 large egg
butter or coconut oil, to grease

Suggested additions
1/8 tsp baking powder
1 tsp vanilla extract 

Suggested toppings
thick natural yoghurt
honey, or liquid sweetener of choice
fresh strawberries

LETS MAKE IT

Step one
Preheat pan or griddle at a medium-low. 

Step two
Using a small food processor, hand-blender or fork - mash/puree your banana. Crack your egg into the banana mix and continue to combine well. Add your vanilla and baking powder if using and mix thoroughly. 

Step three
Add a knob of butter to your pan or griddle. Pour two tablespoons of pancake mixture onto your pan or griddle. Cook for approximately 2-3 minutes on each side, flipping when bubbles appear and golden on the underside.  Allow to drain on a paper towel. 

Step four
Repeat step three until all mixture is used. Remember to grease your pan or griddle between each round of pancakes. 

Step five
Serve immediately with a spoonful of yoghurt, a small handful of berries and a light drizzle of honey.
