Avocado Chocolate Mousse
Who would've thought putting avocado and chocolate together made for such a delicious dessert?! This is a creamy mousse that is so perfectly complimented with the addition of fresh strawberries to cut through the rich flavour.
AVOCADO CHOCOLATE MOUSSE
INGREDIENTS
2 very ripe avocados, peeled and pitted
100g dark chocolate
1/4 C unsweetened cocoa (or cacao) powder
1/4 C liquid sweetener (honey, brown rice malt syrup, maple syrup)
1/2 C coconut cream, left in the fridge overnight
1/4 C almond milk
1 tsp natural vanilla extract
To garnish
Strawberries
Mint
LETS MAKE IT
Step one
Using the double boiler technique, melt your chocolate.
Step two
In a food processor, add all ingredients (including your melted chocolate, aside from the garnish) and process until smooth and creamy.
Step three
Spoon mixture evenly into bowls or glasses. Top with fresh strawberries (I cut mine into heart shapes) and a spring of mint.
Step four
Serve immediately or chill in the fridge until ready to serve. Enjoy!
