Parmesan Crusted Courgette (Zucchini) Fries

Parmesan Courgette Fries are a delicious way to get your chip fix without the carbs or starchy veggies. Once cooked these fries have a shell of parmesan which is any cheese lovers dream! I also bake these in the oven so they're not fried with additional fats. These are delicious on their own or I loved them paired with a good bunless burger.
The recipe is super simple! Using almond meal, coconut flour and parmesan to coat. I used the Dairyworks parmesan wedge which I've been using a lot lately. I love that it comes in a resealable package which saves me having to find a container or ziplock bag to pop it into to keep it fresh. I also love that it's a wedge - for some reason I've only ever purchased blocks. As a lot of you know, I love cheese and parmesan is one of my favourites. I like it shaved in my Not So Caesar Salad the most!
PARMESAN CRUSTED COURGETTE (ZUCCHINI) FRIES
INGREDIENTS
8 courgettes
1/4 cup coconut flour
1 egg
1 c almond meal
1 tbsp. ground salt
100 g Dairyworks parmesan,
LETS MAKE IT
Preheat oven to 180 degrees on bake.
Slice your courgettes into thirds lengthways and then into thirds lengthways again to create sticks.
Place in a large plastic ziplock bag and add coconut flour. Shake until well coated.
In a shallow bowl, crack in an egg and beat until combined. In another shallow bowl, add almond meal, parmesan and salt mixing together with a fork to create a coating mix.
Take a courgette stick coated in coconut flour and dip it into the egg mixture. Then place it into the coating mix and roll around until covered.
Transfer to a lined baking tray and repeat until all courgette sticks are coated.
Place in the oven for 10 minutes before carefully flipping over and cooking for a further 10 minutes. If they're not golden brown, grill them for 5 minutes before removing from the oven.
Garnish with fresh parsley and enjoy!
PAIR WITH A BUNLESS BURGER
I love bunless burgers, they're super simple and curb the cravings to load up on carbs from a bun. For this I used cos lettuce as the bun - this is perfect because it's crisp and holds all the ingredients together well. I also made my own home-made mayo and added fresh herbs from the garden. The beef patty I made is my standard recipe which you can find here. I used Angus beef mince, onion, almond meal, egg and a few spices. As a secret ingredient I added grated parmesan to keep it nice and juicy plus who can't resist a little extra cheese! To bulk it up, I added fresh red onions, tomato slice and avocado along with a slice of Dairyworks Edam cheese slices. These are perfect squares and unlike the plastic overly processed cheese, they're real cheese slices that are good for you!
