Simple Paleo Coleslaw

Struggling to get your veges in? This recipe is a great way to do just that! Lots of cabbage, carrots and bit of onion with lots of fragrant fresh herbs. I love having this tangy zesty coleslaw as a side to macadamia crumbed chicken or roasted pork. You could also add it as a burger filling in Paleo buns.

SIMPLE PALEO COLESLAW

INGREDIENTS

1/2 red cabbage
1/2 green cabbage
3 carrots, peeled
1/2 small white onion
handful herbs (parsley, coriander. and/or mint) - roughly chopped

Dressing
1/2 C home-made mayo
1/4 C apple cider vinegar
1 tsp wholegrain mustard
1 tbsp lemon juice
1/2 tsp himalayan rock salt
1/2 tsp ground black pepper

LETS MAKE IT

Step one
Finely shred your cabbages, dice the onion and grate the carrots. Add these to a large bowl with your herbs and roughly mix to combine. 

Step two
In a small bowl, mix together dressing ingredients until well incorporated into a smooth dressing. 

Step three
Add the dressing ingredients to the large bowl and mix well ensuring the vegetables are fully coated. 

Step four
Serve fresh or keep refrigerated for up to 3 days and serve as required.
