Simple Stuffed Capsicum

I wanted to create another simple yet delicious recipe for you all to try at home, and it doesn’t get any better than these Simple Stuffed Capsicums. Easy enough for anyone to create but also tasty and full of flavour!

This recipe is so simple it only requires 3 ingredients — capsicum, cheese and My Main Course's Savoury Mince. Perfect for an effortless meal after an exhausting day, share these Simple Stuffed Capsicums with a friend, or double up on ingredients to impress at your next dinner party during the festive season.

Meals like these taste even better the next day. I've made a fresh salad with the leftovers by cutting mine one half, sprinkling with rocket and crumbling over feta and avocado. I've also made a snack for a friend by heating up two of the leftovers and serving them topped with sour cream and a side of corn chips. So tasty!

SIMPLE STUFFED CAPSICUMS

INGREDIENTS

2 x 450g packet of Savoury Mince from My Main Course
4-6 capsicums, I like to use assorted colours
1 cup melting cheese, I like to use mozzarella or tasty cheese

LETS MAKE IT

Preheat your oven to 160 degrees on bake. 

Take your capsicums, chopping the tops off just under the steam and removing the lids. Keep this for late. Alternatively, you can cut them in half. 

Place them on in a oven proof dish. Distribute the mince, from the packet into the capsicums filling them as much as you can. Place the lids 

Bake in the oven until the capsicum is soft and the cheese has melted. 

Remove from the oven and let cool before serving warm.
