Sugar Free Keto Cookies

When I'm in the zone for losing weight I follow a ketogenic diet which is very low in carbs. I adapted my Chewy Cacao Cookie recipe to be more low carb friendly. These cookies are gluten-free and grain free. I make mine using this recipe however you can double the recipe if you wish. In this recipe I use the Du Chocolate mix which is naturally sweetened with stevia. 

Sugar Free Keto Cookies

INGREDIENTS 

1/2 C almond butter (you could also use peanut butter)
1/3 C Avalanche Sugar Free Drinking Chocolate
1 egg white
1 tsp vanilla extract
1/4 tsp baking soda

LETS MAKE IT

Step one
Preheat your oven to 180 degrees Celsius on bake.  

Step two
Add all the ingredient to a bowl and mix until well combined.

Step three
Line a baking tray with grease proof paper. Portion in 6 - 8, roll into balls and arrange on the tray. The cookies will expand so ensure there is enough space around each cookie for it to do so. Flatten with a fork. 

Step four
Place in the oven for 15 minutes or the cookies have deepened in colour. They will still be soft when you take them out of the oven.

Step five
Remove from the oven and allow to cool for at least 15 minutes. They are very delicate at this time - do not touch them. Once cool to the touch remove and place on a cooling rack. After another 15 minutes, once solidified you may eat them.

Step six
Eat fresh or store in an airtight container for up to a week. Enjoy!
