Low Carb Cookie Dough Protein Mug Cake

Low Carb Cookie Dough Protein Mug Cake

Serves 1

Total time: 3 minutes

INGREDIENTS

  • 1 egg

  • 2 scoops (30g) Luxe Fitness Salted Caramel Protein Powder

  • 2 tablespoons almond milk (or your milk of choice)

  • 1 tablespoon peanut butter

  • 1 teaspoon vanilla extract

  • 1/2 teaspoon baking powder

Toppings (optional)

  • 2 tablespoons natural unsweetened yoghurt

  • 6-8 sugar free chocolate chips

  • 1 tablespoon peanut butter

METHOD

  1. Beat together the egg milk and vanilla extract in a mug.

  2. Add your peanut butter and whisk to combine.

  3. Place scoops of protein powder and baking powder into the mug and mix until the mixture is smooth with no clumps.

  4. Put the mug into the microwave and cook for 45-60 seconds.

  5. Top with a dollop of yoghurt, chocolate chips and extra peanut butter.

  6. Enjoy!

NOTES

  • I love serving this straight from the mug but you can tip it upside down and the end and transfer it into a bowl if you prefer.

  • Change up the flavour by changing the protein powder! I've used both Luxe Fitness Vanilla Protein Powder to make this and served it with a home-made chia seed jam and I've also made it with Luxe Fitness Chocolate Protein Powder serving with coconut cream and fresh strawberries - so delish!
