Cheese Taco Shell

This recipe is a paid collaboration with Mainland.

When contemplating Mexican one night, I was trying to think of a way to adapt the widely loved tacos to make it healthy and delicious yet still have the novelty of a crispy taco shell. I trailed this many times using all different types of cheese but only found one to be perfect - that being Mainland's Noble. This cheese makes a perfect replica shell as it melts together with minimal holes along with being pliable yet is stiff setting and even better, you don't need to add cheese to your filling because it's already in the shell!

CHEESE TACO SHELL

INGREDIENTS

Taco shell
1/3 C lightly packed Mainland Noble Cheese

Filling
Your choice of filling - pick your favourite taco fillings! I personally like to keep it simple with iceberg lettuce and pulled taco chicken.

PROCESS

Step one
Preheat oven to 180 degrees Celsius on bake.

Step two
Place grated cheese in the center of a lined baking tray. Form circle with the cheese ensuring a thickness of at least 5mm. You could use a circle cookie cutter or food ring to assist.

Step three
Place it in the oven for approximately 5 minutes or until bubbly, oily and starting to reach a golden colour. Remove from oven and blot up excess oil with a paper towel.

Step four
Drape the cheese over a large rolling pin and allow to cool - this will make the cheese harden. Once cool they will replicate a taco shell. Be careful with these as they are very fragile.

Step five
You can now fill them with your ingredients of choice, such as my favourites iceberg lettuce and pulled taco chicken. Enjoy!
