Cauliflower Mash

Cauliflower Mash is one of the best substitutes for your traditional potato mash minus the starch and carbs. It's a staple in a keto diet that will have your friends and family fooled. I use this recipe a lot during the cooler months as seen in my Keto Shepherds Pie. 

CAULIFLOWER MASH

INGREDIENTS

1/2 head of cauliflower - florets only
50 grams of butter or coconut oil
himalayan rock salt + ground black pepper, to season

LETS MAKE IT

Step one
Place cauliflower in a large saucepan and cover with water. Sprinkle with salt and bring to the boil to allow to cook for approximately 5 minutes until the cauliflower is tender but not soft. If the cauliflower is too soft you will run the risk of making a puree. 

Step two
Drain the water from the pot and add butter. Using a stick blender, blend the cauliflower into a mash. Alternatively you could use a potato masher or a food processor. 

Step three
Season with salt and pepper and serve immediately. You will now have creamy and delicious cauliflower mash. Enjoy!
