Sugar Free Chocolate Chip Cookie Dough Balls

Who doesn't like the sound of snacking on raw cookie dough? I'm sure we all have the nostalgia of eating the leftovers from Mums bowl and I went through a phase where I was obsessed with Ben & Jerry's cookie dough ice-cream - yum! I created a sugar-free, low carb and gluten free chocolate chip cookie dough bite recipe using Healtheries Sugar Free Baking Bits as a sugar free alternative for chocolate chips and added an extra sprinkle of Natvia to replicate the sugar grits you find in the raw cookie mix.

SUGAR FREE CHOCOLATE CHIP COOKIE DOUGH BALLS

INGREDIENTS

1 cup raw cashews
1/3 cup gluten-free oats
1 tsp coconut oil, melted
2 tbsp Natvia
2 tbsp Healtheries Sugar Free Baking Bits in Milk Chocolate

LETS MAKE IT

Place cashews and oats in food processor and pulse until they are crumbed and then blend until smooth. Add coconut oil and Natvia, pulsing to combine. Fold through Healtheries Sugar Free Baking Bits. 

Scoop out 2 tablespoon of mixture and roll into a ball. Transfer to the fridge and allow to set for at least 30 mins. 

For an extra chocolately hit, melt 1/2 cup Healtheries Sugar Free Baking Bits and dunk your rolled balls into the melted chocolate to coat. Transfer to the fridge to set for at least 30 minutes.
