Waffle Kumara (Sweet Potato) Rosti

When it comes to breakfast, nothing beats a bit of crispiness with your eggs and this rosti recipe is so simple and delicious! It uses a startchy low GI vegetable called Kumara here in New Zealand but most people will know it as sweet potato. It’s a great substitute for potato with a variety of health benefits. I make this in my waffle maker and serve it with poached egs, salmon and spinach - Eggs Benedict style but you can eat it alone or add your version of toppings!

WAFFLE KUMARA ROSTI

INGREDIENTS

2 large kumara / sweet potato
1 small onion, diced
2 free-range egg
Pinch of pink himalayan rock salt
Handful of herbs, parsley or chives work well.
1 tsp fat (grass-fed butter, coconut oil or ghee) - optional

Special equipment
Waffle maker - I used Breville's The Waffle 

LETS MAKE IT 

Step one
Pre-heat your waffle maker. 

Step two
Grate kumara/sweet potato  and add to large bowl. Sprinkle generously with salt and allow to sit for 10 minutes to drain excess moisture. Taking a tea towel, add the grated sweet potato and squeeze our excess moisture.

Step three
Add back to the bowl (make sure this is dry!), adding your onions, herbs and egg. Mix together to combine.

Step four
Distribute the mix evenly across your waffle maker. 

Step five
Serve with your favourite accompaniments. I enjoy these as a base for eggs benedict or as an alternative for toast!
